The Chilote Gastronomy  
A new universe of rich flavors, smells and colors!

The cuisine of the island of Chiloe, is unique in its taste, smell and rich textures, abound in marine products and chilotes vegetables.
The first feature that warns chilota cuisine that is used for almost all the potato recipes.

Prepare grated and mixed with flour or mashed potatoes and each dish is a variety suitable for their taste or consistency.
Chiloe has about 400 native varieties of potato.
A special place among the dishes Chiloe has oysters.
Japanese an Chileans oysters are cultivated.
Besides using the fish that inhabit the sea and the flesh of cattle, pigs and lambs that are bred in the countryside.
The varieties of apples, from Asturias and Galicia, are small and usually very sweet and acid, are used to make chicha apple, pies and jams.

The "cancato" is an oven-roasted, which is prepared with salmon, sausage, onion and cheese.
The Salmon, the Cierra, Congrio, the Merluza, the Pejerreyes, Jurel or the Corvina, are prepared in different ways, like shellfish.
In Ancud, you can ask for the "Paila Marina", the "Calvillo de Mariscos" prepared with different varieties of seafood such as clams, jets, navajuelas, cholgas and fish.

The most famous dish, known in the whole world, is the Curanto. Not only for its variety of flavors without comparison, but also by the amazing ritual that accompanies its preparation.

It digs a hole in the ground, which makes large rocks, a fire was lit on the stones, until hot, then withdrew the arms, and are deposited on these shellfish are distributed, the other ingredients: chicken, smoked pork, sausage, potatoes, milcaos, chapaleles, beans and peas without drawing.

This dish is accompanied with a "pebre" prepared with onion, tomato and cilantro.

There are other typical dishes, like "Lloco" or "Yoco", the "chilota Cazuela", the Chapaleles and Milcaos.
